Pumpkin Spice Latte

This lovely drink is warm and spicy, with just a hint of pumpkin flavour. It’s perfect for a special Halloween drink, and also perfect for early morning rugby watching (for those of us who will be up at the crack of dawn on the weekend to watch New Zealand play Australia in the Rugby World Cup final)! I have my spare pumpkin puree stored in the fridge so I can make the drink quickly on Sunday morning and not miss much of the game. Go theAll Blacks!

Ingredients (for 4 big mugs worth):
4 cups milk of your choice
1 cup coffee (I used decaf)
4 tbsp pumpkin puree
3 tbsp honey or another sweetener
2 tsp vanilla extract
4 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1/2 tsp ground cloves
Whipped cream (optional)

Method:
* Place all ingredients into a pot over a low heat
* Whisk to combine
* Turn the heat up slowly until the liquid is steaming hot
* Pour into mugs and top with whipped cream and an extra shake of cinnamon if you like

    1. @tryingagain2505 I just boiled pumpkin until it was soft then mashed it until smooth(ish). If you buy pumpkin puree in a can it will be super-smooth, or maybe you have one of those hand-held mashers they would probably make a smoother version as well.
